Recipe: Domoda (Gambian Peanut Stew)

Domoda is a well-known dish in the Gambia that we used to cook for our large families. You can make Domoda in many different ways. You can use shrimps, chicken or beef. If you are a vegetarian you can even leave all this things and make your dish tasty with a lot of vegetables. Typical for the Gambian Domoda is pumpkin and sweet potato, but you can use every vegetable that is available at the market.

Preparation time: 10 minutes / Cooking time: 1 hour / Total time: 1 hour, 10 minutes

Ingredients (serves 4):

- 1 lb/ 450 gr of beef, shrimps or Chicken and cut in small pieces (optional)

- 1 large onion, diced

- 2 tablespoons olive oil

- 3 cloves of garlic, minced

- 3 tomatoes, diced

- 1/2 can (3 oz/ 85 gr) tomato paste

- 3/4 cup natural, unsweetened peanut butter

- 4 Maggi or Knorr tomato bouillon cubes

- 3 cups of water

- Chilies (according to heat preference)

- 4 cups pumpkins or sweet potato, diced

- Salt and pepper to taste

- Rice

Instructions:

Step 1: Heat the oil in large pan. Saute the onions until golden.

Step 2: Add the meat or fish and garlic and continue to sauté until the meat and fish have are light baked.

Step 3: Add the tomatoes and cook for 3 minutes.

Step 4: Add the tomato paste, chilies, peanut butter and stir to combine.

Step 5: Add the water and bouillon cubes. Bring to a boil, reduce heat, cover, and simmer for 15 minutes, stirring occasionally.

Step 6: Add squash, cover, and continue to cook for 35-40 minutes or until the pumpkin is tender, stirring occasionally.

Step 7: Season with salt and pepper.

Step 8: Serve hot with rice. This stew tastes even better the next day.
